Ingredients
1 1/2 pounds boneless chicken breasts
1/4 cup creamy peanut butter
1/4 cup white vinegar
3/4 cup vegetable oil
1 1/2 teaspoons prepared mustard
2 Tablespoons soy sauce
1 1/4 teaspoon ginger
2 teaspoons toasted sesame oil
1/4 teaspoon crushed red pepper
1/4 cup honey or other sweetener
1 teaspoon salt
Instructions
- Slice chicken to 1/4 inch thickness and thread onto wooden skewers. Mix all ingredients together and pour over chicken. Marinade in refrigerator for 2 to 24 hours. Grill or broil until cooked through (about 10 to 15 minutes).
